Desserts can absolutely be a part of your life, even while on a fat loss journey. And – bonus – they can definitely still be blood sugar friendly too! Let me share with you some amazing recipes that will satisfy that sweet tooth and still support the goals you have:
1. Protein Cookie Dough
Ingredients:
½ c oat flour
1 serving vanilla protein powder
1 Tbsp maple syrup
Dash of vanilla extract
1-2 Tbsp of milk of choice – just enough to combine
1-2 tsp chocolate chips
Directions:
Combine all ingredients together until a dough forms! Add chocolate chips as you desire – our favorite is dark chocolate. You can also let this sit in the fridge or freezer for 20-30 minutes so it firms up a little. Enjoy!
2. Banana Snickers
Ingredients:
Bananas (as many as you want to make)
Preferred nut butter
Melted chocolate
~1 tsp coconut oil
Chopped peanuts or almonds
Sea salt
Directions
Peel bananas and slice vertically and horizontally (4 servings per banana)
Spread about 1 tbsp of preferred nut butter on the banana
Melt chocolate and coconut oil together (just a little bit in the chocolate helps to melt it nicely) and drizzle over the bananas
Top with chopped nuts and a little sea salt
Let sit in the freezer for at least an hour to harden
3. Single-Serve Blueberry Crumble
The perfect sweet treat for whatever berries you have! This would work with raspberries, blueberries, strawberries, or a combo!
Combine these ingredients in your ramekin:
1 c blueberries
2 tsp maple syrup
2 tsp lemon juice
1 tsp flour
Combine these ingredients and spread on top of your berry mixture:
1 Tbsp flour
1/4 c oats
1 Tbsp pecans or walnuts
1 Tbsp coconut oil
Pinch of cinnamon
Bake at 350 F for 20-25 minutes.
4. Avocado Fudge
(8 servings)
Ingredients:
6 oz dark chocolate (chopped)
1/2 avocado (ripe)
1/3 c maple syrup
1/3 c nut butter
1/2 tsp vanilla extract
1 1/2 Tbsp cocoa powder
1/2 tsp sea salt
2 Tbsp water (cold) – 1/4 c walnuts (raw, roughly chopped)
Melt chocolate in the microwave. Set aside to cool.
Line a loaf pan with parchment paper, leaving an overhang on both sides.
Place avocado, maple syrup, and nut butter in a food processor.
Process until completely smooth, about one minute.
Add vanilla, cocoa powder, salt, and water and pulse until incorporated.
Add in melted chocolate and pulse again to combine.
Transfer fudge to the prepared pan, smoothing the top with a spatula.
Top with walnuts.
Freeze at least 8 hours before slicing and serving.
5. PB stuffed dates
Ingredients:
Medjool dates
Peanut, almond, or cashew butter
Chocolate chips
Take your date, cut in half and remove the pit. Spread about ½-1 tbsp of preferred nut butter inside the date. Add a couple chocolate chips on top. Enjoy!
