Kodiak Cake Pancake Bread

Looking for a high-protein, high-fiber, versatile breakfast that you can meal prep in advance if you want to?

Say no more. I’ve got our most popular and viral recipe for you to try. Our Kodiak Cake Pancake Bread. 

What you’ll need per serving:

  • ¼ c Kodiak cake pancake/waffle mix 
  • 1 egg
  • 1 scoop of vanilla protein powder
  • ½ c unsweetened nut milk
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1 Tbsp chia seeds
  • 1 Tbsp ground flax seeds

I used individual glass containers that were 6 x 6 inches and 2 inches tall. This doesn’t need to be exact – use whatever oven-safe glass containers you have. This is great because you can prepare the pancake bread in the container, bake it in the same container, and store it in the fridge in the same container – all in one.

And then if you want to make several servings at a time – just grab however many containers you need.

I have only tried baking this recipe in the oven (not in the microwave), but I’m sure it would turn out if you tried the microwave too! Feel free to experiment 🙂

Directions:

  • Mix all the ingredients together in the glass container.
  • Top with any toppings you prefer like chocolate chips, fruit, nuts, etc.
  • Bake at 350F for 20-25 minutes.
  • Let cool and enjoy immediately or save for later in the fridge. You can warm it up and add more toppings later too!

  • 39g protein
  • 14g fat
  • 26g carbs
  • 8g fiber

*macros vary depending on the protein powder that you use as well

Protein powder: I used Levels protein powder in this recipe but you can definitely use whatever you prefer – as well as different flavors.

Other notes:

  • You don’t have to use unsweetened nut milk – us whatever milk you prefer!
  • If you don’t have chia or ground flax seeds – that is optional and you can mix and match. Hemp seed would work great as well. 
  • You don’t have to use Kodiak brand – if you prefer something else that should work as well! Again, feel free to experiment with this!
