Cottage Cheese Pizza Bowl

Okay, by now it probably feels like cottage cheese is the new cauliflower. But it is such a great way to easily pack protein into a meal or snack. You may not like cottage cheese, but I can almost guarantee that you like pizza…so, hear me out…cottage cheese pizza bowl! This is a good way to use cottage cheese if you aren’t a huge fan of its taste or texture when it is by itself. This is also a great way to increase nutrients using ingredients that everybody likes. I mean, who doesn’t like the taste of pizza? The best part about this meal is that it can be made in the oven or microwave and takes only a few minutes. 

Makes 1 serving 

Time: 5-15 minutes depending on cooking method 

Here’s What You Will Need:

  • 1 tsp olive oil
  • ½ c baby spinach 
  • 1 c cottage cheese
  • ¼ c marinara sauce (my fave is Rao’s)
  • 1 oz mozzarella cheese (shredded)
  • 1 oz turkey pepperoni (quartered)
  • 1 small green pepper (chopped)
  • ½ tsp Italian seasoning
  • Basil leaves (optional – to taste)

Here’s How to Make It:

1. Preheat oven to 400F.

2. Heat oil in a pan over medium heat. Add spinach and cook until just wilted (you can also lightly cook the bell pepper with the spinach as well if you prefer it more tender).

3. Mix all ingredients except cheese in an oven-safe dish. Top with the cheese.

4. Bake in oven for 8-10 minutes, then turn to broil and cook 2 more minutes. *Watch closely to make sure the cheese doesn’t burn* 

Note: this can also be warmed in the microwave instead of baked!
