Are you looking for the perfect side dish to bring to your work potluck or to a friend’s house while watching the game? Then you need this casserole.
Two of my all-time most popular recipes are: Slow Cooker Buffalo Chicken and Buffalo Chicken Dip. Clearly, you all are my people. This recipe literally just takes those and turns them into a whole casserole. Because who doesn’t love a casserole?
Seriously, once you make it, whoever tries it will be begging you to bring it again. This can be eaten as a meal or served as an appetizer (you can really use it as a dip for whatever you want) – the possibilities are endless!
Buffalo Chicken Casserole
Prep time: 5 minutes
Cook time: 35 minutes
Servings: 3
Ingredients:
- 12 oz shredded chicken (rec: rotisserie chicken)
- 4 cup riced cauliflower
- 2 celery stalks, chopped
- 1/4 cup buffalo sauce (rec: Frank’s Buffalo)
- 3 oz cream cheese
- 1/3 cup Greek yogurt
- 3 oz cheddar cheese (shredded, divided)
- 1 tsp garlic powder
- 1 tsp onion powder
- 3 red bell peppers (sliced)
Instructions:
- Preheat the oven to 350°F.
- Combine chicken, riced cauliflower, celery, buffalo sauce, cream cheese, Greek yogurt, seasonings, and half of the cheese.
- Add mixture to a baking dish and top with remaining cheese.
- Bake for about 35 minutes or until the cheese is melted and bubbling.
- Chop the bell peppers into thick slices. Cover slices with buffalo casserole or use them for dipping!
